Chile-Marinated Chicken Wings
Prep time:
20 minutes, 2 hour marinade, 16-18min grill
Ingredients
Meat
16 count or about 2 1/2 lbs chicken wings, tips removed
 
Marinade
4 dried pasilla chili peppers
2 Tbl canola oil
1/2 cup catsup
3 Tbl soy sauce
2 Tbl basalmic vinegar
3 medium garlic cloves, crushed
1 tsp ground cumin
1/2 tsp dried oregano
1/4 tsp kosher salt
1/4 tsp freshly ground black pepper
Preparation
Marinade: Stem and seed the chiles before sectioning into 2" strips. Heat the oil in a medium skillet over high heat. Add the chilis to teh warming oil and toast until the begin to change color. Remove chiles and oil to a small bowl and cover with 1 cup of hot water to soak the chiles for 30 minutes. Blend mixture in blender or food processor with remaining ingredients until smooth.

Bag marinde chicken for about 2 hours before discarding marinade and grilling over direct medium heat until chicken is cooked through, 16-18 minutes.
