Egg rolls
Ingredients
OUTERS
1/2 cup flour
1/2 cup water
 
INNERS: CRAB FILLING
1 lb crab meat
1 lb ground pork
1/2 cup green onions, minced
1/2 cup water chestnuts, minced
1 Tbl soy sauce
1 egg yolk, beaten
 
CHICKEN FILLING
1 lb ground chicken
1/2 lb ground ham
1/2 cup water chestnuts, chopped
1 Tbl soy sauce
1 egg yolk, beaten
2 tsp ginger, grated
 
MUSHROOM FILLING
1/2 lb ground pork, ham or shrimp
1/3 cup green onions, minced
1 cup bean sprouts, chopped
1/4 cup water chestnuts, minced
1/2 lb mushrooms, chopped cooked in 3 Tbl oil
2 tsp cornstarch
1 Tbl soy sauce
Preparation
Heat and lightly grease a small griddle. Mix flour and water and lightly paint a 5" square on the griddle. Remove as soon as dry and place a roll of filling on one side and roll up. Fry rolls in 370F oil before serving.
