boiling water

Preparation
Filling: toss all ingredients until well mixed.
Assembly: Pour boiling water into a shallow container and immerse each wrapper for ten seconds to soften before placing on a moist towel. Stuff with "less filling than you think you should" and roll as a burrito, sticking two mint leaves within the rolled layers.
