Tahoe Banana-Oat Pancakes
Yield:
4 Servings
Notes
My friend Kristi had access to a cabin in Tahoe and used to invite us all up for a weekend of skiing and frivolity. Knowing that I was going to be on the hook for at least one meal, I delved for the first time into Epicurious and dug up these hearty fellers. I recall searching high and low for wheat germ that first time at the unfamiliar Stateline Raley's megamarket. Double whammy: where'd you'd find it, and where'd you find it -here-.

Raleys is like that.
Ingredients
1 cup old-fashioned oats
1 cup nonfat milk
1 cup mashed ripe bananas (about 3 med)
2 eggs
2 Tbl wheat germ
1 tsp ground cinnamon
1 1/2 cups oat-bran/mixed grain pancake mix
Preparation
Mix oats and milk in a large bowl. Let stand until oats are soft (about 15 minutes). Mix in mashed bananas, eggs, wheat germ and cinnamon. Gradually stir in pancake mix (batter will be very thick).
