I stood in fear of this recipe for some time, having horrible recollections about a dish involving tortillas and worrying that this one was perhaps it. I've made it several times and under several conditions including make-ahead freezing and have not yet come up with a mystery method for fouling this thing up. Delicious 70s goodness!
Ingredients

hamburger

onion,
chopped
|

2 cups
|
tomato sauce
|
|
1-2 Tbl
|
chili powder
|
|
1 small can
|
nibblets corn
|
|
|
salt and pepper
|
|
1 small can
|
olives
|
|
2
|
tortillas
|
|
1 cup
|
cheddar cheese,
grated
|
Preparation
Brown hamburger and onion together in skillet. Remove from heat and mix in chili powder, tomato sauce, and corn. Season with salt and pepper to taste.
Arrange a layer of tortillas on the bottom of casserole. Put half of the sauce in a layer and top with chopped olives and grated cheese. Repeat.
Bake at 325F for 30 minutes.
