Zucchini Bread, Candidate Two
Yield:
2 loaves
Notes
My gut instinct says that Candidate One is the more likely favorite at the end of the day, however the fact that this one used both cinnamon and a whopping two -cups- of honey made it a bit more interesting sounding if only for the using of two -cups- of honey...
Ingredients
3 cups flour
3 tsp cinnamon
1 tsp baking soda
1 tsp salt
1/4 tsp baking powder
1/2 tsp nutmeg
3 eggs
2 cups honey
3/4 cup oil
3 tsp vanilla
2 cups zucchini, grated
1/2 cup walnuts, chopped
Preparation
Sift together flour, cinnamon, baking soda, salt, baking powder and nutmeg and fold in remaining ingredients, stirring minimally. Bake at 325F for 60 minutes.
